What's all the fizz about?

Kombucha is a naturally carbonated, fermented tea that has been considered a health beverage for thousands of years. The ancient Chinese even called it “Divine Tea” and an “Immortal Health Elixir”. Kombucha is a made from a sweetened tea that is fermented by a colony of bacteria and yeast called a SCOBY. This is often called the “mother” because of its ability to reproduce. As the mother digests the sugar in the tea, it produces a range of organic compounds like acetic acid, lactic acid, glucuronic acid, glucosamines, B vitamins and vitamin C. All together, kombucha is a natural probiotic, rich in antioxidants and detoxifying compounds. Specifically, it aids in:
